Mashed Potato

1.7 kg Idaho potatoes, peeled weight
3 Lt salt water
175 ml milk
125 ml fresh cream d’isigny
75 butter,
cold50 ml fresh cream
Salt and pepper

Cut potatoes into cubes of 2 cm and boil in salted water until cooked.
Drain and dry potatoes on a tray in the oven for 5 – 10 minutes.

Squeeze the potatoe through a mill and add milk and stir to mix well.

Add fresh cream, stir well.Whisk in cold butter.Season with fresh cream, salt, pepper and nutmeg
